Make Ahead Stuffed Bell Peppers- #CavanuaghStyle

If your family is anything like mine, you also have probably not plucked your eyebrows in a few weeks because time is scarce. Now that Mark is working, meal prep is even more important. By the time I get off, pick up Aubrey, and get home– I don’t feel like chopping veggies or doing much cooking at all whatsoever.


That’s Why I loved prepping stuffed bell peppers on Sunday. While there are many ways to meal prep, I prefer cooking and portioning all my meals and heating them up. But sometimes I don’t want to have reheated food and I also don’t want to deal with cooking during the week.


The most time consuming part of prepping your stuffed bell peppers is making the rice. I mix it up week to week–white rice, quinoa, brown rice, frekeeh, ect. This week it was white rice!


After cleaning and cutting your chosen bell peppers. You will use your 21 Day Fix portion containers to measure out and mix the right amount of rice and meat!

You can stuff your bell Peppers place in the cooking dish of your choice. Cover with foil. Then when you get home from a long ass day at work, all you need to do is heat up the oven and throw them in for 30 minutes!
